Avocado on toast - the menu item that has kept an entire generation out of the property market. I can't begin to tell you how many times have I studied a breakfast menu before landing on the smashed avo. Again.
Whether it's your weekend ritual, a wholesome start to your day, or your go-to quick lunch at home, avocado on toast always satisfies.
When introducing solids to my first child, I was thrilled to discover that Weetbix mixed with avocado was very reminiscent of my signature brunch order. It tastes just like avo on toast. No longer able to frequent cafes as I once did, I now enjoy my avo on toast while my baby enjoys her very own minced and moist smashed avo.
And so, the IDDSI Level 5 smashed avo was born!
Ingredients:
1 Weetbix, crushed
2 tbsp water
1/2 a ripe or very ripe avocado
1/2 tbsp lemon juice (can be substituted with water)
Salt and pepper to taste
Method:
Add all ingredients to a small bowl and combine thoroughly with a spoon. Add water until desired consistency is reached.
That's it!
Optional extras: scrambled egg, feta, hummus, dukkah, chili flakes, finely chopped herbs, or sesame seeds. Use your imagination but ALWAYS conduct the spoon tilt test and fork pressure test to ensure a minced and moist texture.
