Mashed potatoes has always been a comfort food of mine, it is quick, simple and nutritious. My partner is from a spud farming family so I have had mashed potatoes more times than I can count!
It can be modified to suit most dietary requirements by substituting the milk for a plant based option.
Ingredients:
- 500g potatoes (preferable Yukon Gold)
- 50g salted butter
- 20 ml of milk (can be substituted for a plant based milk)
- Pinch of salt (if desired)
Method:
- Peel and chop the potatoes evenly.
- Boil the potatoes until soft.
- Mash the potatoes thoroughly - alternatively you can pass them through a ricer for ease if you have one on hand.
- Push the potatoes through a fine metal sieve. Use a clean spoon to scrape the outside of the sieve.
- Add the butter, salt and milk to the potatoes.
Once you're finished test the mashed potatoes using the IDDSI guidelines to ensure you have reached a level 4 consistency.
Use the spoon tilt test in the IDDSI guidelines to make sure the potato slides off the spoon easily when tilted and holds its shape.
Use the fork drip test in the IDDSI guidelines to make sure the potato doesn't drip through the prongs of the fork when held up.
