2 pounds root vegetables, cut in roughly 1/2-inch pieces
2 tablespoons miso paste (see above)
2 tablespoons maple syrup (or honey, if you prefer)
2 tablespoons rice vinegar
1 tablespoon soy sauce
2 tablespoons canola or grapeseed oil
6 to 8 pounds bone-in, skin on pork shoulder
3 tablespoons fennel seeds, toasted, crushed
14 pieces garlic cloves, crushed
3 tablespoons kosher salt
1/2 cup olive oil
1 teaspoon cayenne pepper
1 teaspoon black pepper
3/4 cup grade b maple syrup
1 big bottle of Matilda, or another malty fruity ale
2 teaspoons malt vinegar
5 cups all-purpose flour (you can replace a couple cups with whole wheat if you wish)
11/2 cup rolled oats
1/3 cup maple syrup (preferably grade B)
1/4 cup melted butter or olive oil
2 teaspoons salt
1/2 teaspoon instant yeast
2 1/4 cups room temperature water
