Maize meal porridge IDDSI level 4

Maize meal porridge, also known as 'mielie pap' in Afrikaans, is a traditional meal made with fine maize meal, water and a pinch of salt.

Ingredients:

  • 3/4 to 1 cup maize meal
  • 1 cup of cold water
  • 3 cups boiling water
  • 1 teaspoon salt
  • 1 tablespoon butter

Method

  1. Boil the 3 cups of water and salt in a pot with a lid.
  2. Mix the maize meal with the cup of cold water to prepare a thick paste.
  3. Stir the paste into the boiling water.
  4. Simmer for at least 20-30 minutes with the lid on. Stir towards the end of the cooking time.
  5. Add a dollop of butter.

Serves 3-4 people.

The thick puree texture can be thinned by the addition of milk or butter.

For breakfast, serve with milk, sugar, honey or cinnamon for taste!

Maize meal porridge can additionally be served as a savoury dish at lunch or dinner with meat stews. My family ocasionally enjoys maize meal porridge with a tomato and onion stew and sausages - a traditional South African meal known as 'pap en wors'. *Please note that when these ingredients are added, it is no longer an IDDSI Level 4 dish.
