Overview

The Navarro Ceciliano family has a long, rich history in coffee, dating back more than one hundred years. Their farms are located between 1,350 and 1,900 m.a.s.l. to allow for production in various microclimates in the renowned Los Santos region of Costa Rica.

Yellow Honey

Ripe cherries are meticulously collected and sorted, then depulped the same day as they are harvested. Yellow Honey is a semi-washed process that uses a small amount of water and leaves a thin golden mucilage on the bean during the drying process. The beans are sundried in the mucilage for 9 days, and turned periodically with paddles throughout that time until optimal moisture is uniformly obtained.

The Santos region of Costa Rica - located in the central part of the country - is well known for its characteristic rugged topography, high altitudes, and weather conducive to coffee cultivation. Because the harvest period coincides with dry season, producers are able to delay the crop until the beans have a more concentrated sweetness. In higher altitudes, the lower temperatures help to developed a pronounced acidity. The main challenge in this area is the rugged topography that complicates the work during harvesting.
