Marble Bread 巧克力大理石面包
Ingredients - 配料
- 115g bittersweet chocolate - 115g 黑巧克力
- 2 tbsp coffee - 2汤匙咖啡
- 1-1/2 cup + 2 tbsp cake/pastry flour, sifted - 1-1/2杯+2汤匙低筋面粉
- 2 tsp baking powder - 2茶匙泡打粉
- 1/4 tsp salt - 1/4茶匙盐
- 1/2 cup unsalted butter - 1/2杯无盐黄油
- 3/4 cup granulated white sugar - 3/4杯白砂糖
- 2 large eggs - 2个鸡蛋
- 1 tsp vanilla extract - 1茶匙香草精
- 1/2 cup sour cream/plain yogurt - 1/2杯酸奶油/原味酸奶

- Preheat the oven to 350F. - 预热烤箱至350F.
- Melt the chocolate over simmering water in coffee. - 用小奶锅烧开水, 不用很多。把巧克力放在一个比锅稍大的碗里, 把碗卡在锅上, 注意不要沾到水. 搅拌至巧克力融化. 加入咖啡, 搅拌均匀.
- Line a 9in by 5in loaf pan with butter and flour. - 取一个9英寸*5英寸的面包烤盘, 内壁用软刷或手薄薄刷一层黄油, 再撒上面粉使其均匀粘在黄油上, 抖出多余面粉. 裁一张大小合适的油纸铺在盘底.
- With an electric mixer, beat butter until creamy. - 黄油软化, 切小块, 用电动搅拌器打成奶油状.
- Add sugar to butter, beat until fluffy. - 在黄油中加糖打发.
- Add vanilla extract and mix well. - 加入香草精, 搅拌均匀.
- Add eggs into the mixture one by one. Do not over-mix. - 逐个加入鸡蛋并搅匀, 注意不要过度搅拌.
- Combine flour, salt and baking powder in a separate bowl. Whisk them together. - 另取一个碗, 将面粉, 盐和泡打粉混合.
- Divide the dry ingredients into 3 parts, add it alternatively with sour cream or plain yogurt, beginning and ending with the dry ingredients. - 将混合面粉分3份, 酸奶油或原味酸奶分2份, 轮流加入黄油糊中. 搅拌均匀.
- Take a little less than half of the batter and combine with previously melt chocolate. - 取一小半面糊与之前融化的巧克力混合均匀.
- Using 2 spoons, lay small portions of each batter alternatively in the lined pan in the form of a checker board, layer by layer, with 3 parts on the shorter side. Usually the batter is enough for two layers. Make sure the pattern on the two layers are alternating. - 取两个小勺, 将两种面糊交错着按照棋盘格的样子放入烤盘里. 通常面糊可以垒两层. 注意两层图案的颜色要岔开.
- Take a skewer or chopstick and lightly swirl the mixed batter to create the marble effect. - 用竹签或筷子微微搅拌面糊, 从而得到想要的大理石花纹.
- Bake for about 1hr or until an inserted toothpick comes out clean. - 烤制大约1小时, 或至竹签插入面包内没有面糊带出即可.
- Cool to room temperature on a wired rack. - 放在网架上冷却至室温.
