HOW TO PAIR CRAFT BEER WITH FOOD

COMPLIMENT

Matching flavors that are similar in the beer and the food . For example, “Dark” kilned malts in porters and stouts match roasted and grilled foods. This is because of the Maillard reaction which is the browning and caramelization that occurs in both cooking and in malt roasting.

Example: Roasted lamb shank with an English porter

CONTRAST

There will always be something in both the dish and the beer that is a contrast. The key is to identify the main flavor characteristic of the food and the beer and contrast these. For example: Sweet vs Sour - Spicy vs Sweet - Bitter vs Sweet.

Example: Spicy curry and a tropical IPA

CUT

The objective of a Cut pairing is to use beer to cleanse flavors from the dish from your palate. Drier beers and hoppy/bitter beers work well with fatty or buttery dishes to achieve this effect. Beers with a sweeter finish work well with more acidic foods to also cleanse the palate.

Example: Crab legs and butter with a saison or session IPA or imperial stout with spaghetti.

INTENSITY

An Intensity pairing is when you are equalizing the overall profiles of the beer and the food but not necessarily trying to match the flavors. So match strong/bold beer with rich foods or lighter beers with delicate foods will.

Example: Beef short ribs with a Belgian dubbel or Belgian White ale with fresh pesto and pasta.
