Peanut Butter & Honey Banana Muffins @WHOLESOMELICIOUS

Typically, I detest baking things that involve bananas. Read a Lutheran Witness online exclusive article inspired by this sentiment here! From the article:

Produce evades precision. Just how ripe is “ripe?” How big is a “medium” banana? If a recipe calls for 2–3 bananas, do I use two or three?

But, given that I believe peanut butter is a food group, these looked too good not to try!

(I keep my honey in a zipper lock bag to keep the ants out!)
Step 1: Combine wet and dry ingredients in separate bowls.
Fold dry ingredients into wet ingredients. Rule #1: Do NOT overmix muffins!

I *almost* forgot to spray the pan!

HOW. MUCH. LONGER?!?
Going for a walk while I wait for them to cool...

The verdict: 10/10. Not as sweet as I thought they'd be, but perfect with a dab of butter. I think they'd be good with jelly, too!
