Rice pudding is a dish made of rice mixed with water or milk to make a more glutinous, porridge-like consistency. It can be sweet or savoury (although more often sweet) and served hot or cold.

Cooking time: 35 minutes
Ingredients
- 2 1/2 cups (600ml) coconut milk
- 1/3 cup (66g) of uncooked short grain rice
- 1 pinch of salt
- 1 egg, lightly whisked
- 1 tsp vanilla essence or other flavouring
- 2 tbs brown sugar (or alternative sweeteners such as honey)
- 1 tsp cinnamon
- Toppings such as raisins or berries (optional)
Method
- In a saucepan, bring the milk, rice and salt to a boil over high heat. Reduce heat to low and simmer, while stirring frequently, for 20-25 minutes or until the rice is tender.
- Whisk the egg and sugar in a bowl. Add the rice mixture little by little, whisking well between additions.
- Add the mixture back into the saucepan and stir over low heat until thickened.
- Remove from the heat and add vanilla and cinnamon. Add in raisins or other additions such as berries (optional).
- Serve hot or cold
Notes on consistency
- The pudding will thicken once cooled, after refrigeration it will become much thicker
- To create a thinner mixture, add more milk/liquid
- To create a softer mixture, boil the rice for longer
- If adding toppings, the pudding is no longer appropriate as IDDSI level 5
