- The shortened cake is the most common cakes prepared. It consists of a solid fat, such as butter or margarine, a small amount of eggs (usually 2-3), and a chemical leavening agent such as, baking soda and/or baking powder. The shortened cake, sometimes known as butter cakes, usually have moist, tender crumbs and a fine, even grain.
MIXING METHOD - CONVENTIONAL
The yellow cake recipe from allrecipes.com features ingredients found in shortened cakes, for example: butter and baking soda. The recipe begins with creaming butter and sugar, and continuing with beating in egg yolks. Then, the baker should mix in the flour mixture alternately with the milk, the liquid, until all ingredients are in, that's an example of the conventional mixing method.
This recipe relates to the shortened cake we made in class because it is made using the conventional mixing method. It differs because in class, we made miniature versions, cupcakes, instead of a layer cake.
