Chinese Almond Cookies

Ingredients
  • 200g sifted all-purpose flour
  • 120g almond flour
  • 1 cup white sugar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter
  • 1/2 cup shortening
  • 1 egg
  • 2 tsp almond extract
  • Whole almonds
Preparation

Preheat oven to 350 degrees F (180 degrees C).

Sift flour, sugar, baking soda, baking powder and salt together into a bowl. Cut in the butter and shortening until mixture resembles cornmeal. Add egg and almond extract. Mix well.

Roll dough into 1-inch balls. Set them 2 inches apart on a cookie sheet. Place an almond on top of each cookie and press down to flatten slightly.

Bake in the preheated oven until the edges of the cookies are golden brown (15 to 17minutes).
