What is Nasi Lemak?

Nasi Lemak is a Malay cuisine that is commonly found in Malaysia and Singapore. It is a rice dish that is usually served with coconut rice, sambal (spicy chili paste), egg, anchovies (called as ikan bilis), roasted peanuts, and cucumber slices. At times, people would also add either fish or chicken to this dish.

Why did I choose this food?

I chose this dish as it is a dish that reminds me of home (Singapore). It is well-loved and is a comfort food for many Singaporeans (including myself). It allows the eater to experience a burst of flavour from each of the ingredients in the dish and always makes you wanting more.

Dysphagia-friendly foods are commonly known for being bland or at times not catered to certain people's cultural backgrounds which could reduce the quality of their whole eating experience. By making a dysphagia-friendly version of this dish, I felt that it would add elements of flavour and variety into a person's meal while incorporating cultural aspects which could potentially brighten their eating experience.

Nasi Lemak Recipe

(Due to safe eating concerns, anchovies and peanuts were excluded from this recipe)

Recipe Instructions

Coconut Rice:

  • Add 1 cup of rice into a pot
  • Rinse rice and drain it
  • Add 1 cup of coconut milk into the pot
  • Add 4 cups of water into the pot
  • Then cook the rice

Scrambled Egg:

  • Crack an egg into a small bowl
  • Add 1/2 tablespoon of milk
  • And beat the mixture lightly with a fork
  • Preheat a frying pan with low heat
  • Once ready, add 1/2 tablespoon of oil
  • Pour the mixture into the pan
  • Let it cook for a few seconds
  • Once the edges of the egg start to solidify, using a spatula pull the edges of the egg into the centre of the pan
  • Continue folding and stirring the egg until it looks soft and not too dried
  • Once achieved, immediately turn off the heat and transfer the egg onto serving plate (This will prevent the egg from cooking further while sitting in the pan)

Sambal paste (a store-bought sambal paste was used for this recipe) - you can also make your own sambal from scratch:

  • Add 1 tablespoon of store-bought sambal (Depending on your own preference and spice tolerance) into a blender
  • Blend until there are no traces of solid ingredients [Sambal already has a pasty consistency but due to certain sambal pastes consisting of solid ingredients like anchovies, it would be safer to blend it (even if unsure of the ingredients added into it)].

Lastly. add all ingredients together on a plate and serve.
