IDDSI Testing - Level 5 Minced and Moist

To make the pudding a minced and moist consistency, mix the sauce from the pudding in with the cake. Add water or custard to the pudding to help combine to the desired consistency.

A Level 5 consistency is soft and moist, requires minimal chewing and can be mashed with pressure applied from a fork.

Remember to test the food consistency using the IDDSI Spoon Tilt Test and Fork Drip Test to ensure it complies with the IDDSI Level 5 Minced and Moist consistency.

IDDSI Spoon Tilt Test

Sample holds its shape on the spoon and falls off fairly easily if the spoon is tilted or lightly flicked. Sample should not be firm or sticky.

IDDSI Fork Drip Test

Liquid does not dollop, or drip continuously through the fork prongs.

The pudding passes the 'IDDSI Fork Drip Test' as it does not dollop or drip through the prongs.
