Acai Smoothie Bowl IDDSI LEVEL 3

Açai is a dark berry found in South America, and is famously known as a superfood packed full with antioxidants. Acai bowls are a great summer recipe, and remind me of hot beach days with my friends. They are the perfect addition to include in your breakfast or snack rotation. This acai bowl recipe is thick, sweet, smooth and refreshing, made with mixed berries and frozen acai puree.

Ingredients: Serves 2

Prep time: 15 minutes

  • 2 cups frozen mixed berries
  • 1 banana preferably frozen
  • 3/4 cup apple juice
  • 1/2 cup coconut yogurt
  • 150 g frozen acai puree (about 1 cup, or 1 tbsp acai powder)
Method
  1. Put frozen banana, mixed berries, apple juice, coconut yogurt, and frozen acai puree into blender. Blend until smooth and creamy.
  2. Scoop into bowls and top with your favourite ingredients. Optional toppings include: fresh strawberries and banana, granola and coconut flakes to sprinkle, and a spoonful of peanut butter.

*PLEASE NOTE: When topping your smoothie bowl with additional ingredients, the recipe is no longer suited for IDDSI Level 3.

The best tip for having a thick acai bowl consistency is to use frozen banana. A thinner consistency can be achieved using fresh banana.
