Chef Santi Taura AWARDED two guia repSol soles 2023

March 10, 2023 ... Guia Repsols, a benchmark for national gastronomy, announced the recipients of their coveted suns in March 2023 - and we are proud to announce that DINS Santi Taura has been awarded Two Soles, a prestigious distinction awarded to the best Spanish restaurants and chefs.

The restaurants are chosen by men and women gastronomy specialists who make up the Repsol Guide team of inspectors who assess restaurants. Apart from the quality of the dishes, other factors come into play such as "the comprehensive customer experience, the use of local products, the technical capacity of the dining room team or the essential coherence of the projects".

What Determines the Award?

A restaurant that stands out for developing a concept in which the kitchen shows maturity, potential and ambition to continue evolving. It stands out for its mastery of the technique and the search for the best raw materials. With an impeccable service capable of making the attention flow naturally, and a very thoughtful winery. It deserves the many kilometers traveled.

What distinguishes Santi's cuisine?

Roots. History. Product. Santi Taura's cooking is about delivering a gastronomic journey through the lens of history, customs, recipes and products, with respect to each and every season. At the same time, it is about discovering Majorcan cuisine from a current point of view, while considering the past and roots of the cuisine.

DINS Santi Taura offers an experience inspired by the island’s traditional cuisine, made with locally sourced seasonal ingredients. Bringing together elements from sea and land to your table, the chef offers seafood from local waters, prized black pork from an island producer and more unique specialties all within a distinct setting.

The Cuisine: Interpreting the Classics

During the dining experience at DINS, Chef Santi also explains a bit of the history of the dish giving you a greater appreciation and understanding for the creation of the dish. Using only local products, Santi introduces guests to the riches of the island, be it from the land or the sea. "We do not invent anything, we only cook things that are documented in our gastronomic history," says Chef Taura.

Traditional Balearic cooking remains the core of the DINS Santi Taura menu in which the chef provides his own interpretation of dishes that have been made for centuries across the islands. Signature dishes include ‘Panada de Peix de roca’, a traditional rock fish pie which many consider to be one of the oldest recipes on the island. ‘Porcella amb Anfós’, another singular dish, brings together both the sea, and the mountains using the finest pork from Can Company, one of the most respected producers of Black Pork and Yellowbelly Grouper on the island.

Other popular dishes are grilled red prawns, ‘Gambes fregides’ and the distinctive ‘Espinagada’, a vegetable and eel pie which originates from the Majorcan town of Sa Pobla and is often associated with the feast of St. Anthony. The restaurant’s award winning sommelier, Joan Arboix, brings a wealth of experience to pair and recommend wines to the guests.

Artist and Potter

Santi has always felt a strong connection to the earth and nature and brings that with him into the restaurant in many ways. He is now creating pottery - all dishes are hand molded by him - and some are created for a specific dish that he serves in the restaurant. At times the glaze is embedded with soil, and he also uses twigs from the forest to create a design into the clay - his connection to the earth couldn't be more present.

The History

Widely regarded as one of the island’s most talented chefs, Santi Taura has been cooking for nearly 30 years. He opened his first solo eponymous restaurant in the town of Lloseta in 2003 - a special location for the chef - as it had been his grandmother's home. In 2016 he opened DINS located in an old carpentry at the back of the restaurant and offered a single tasting menu. This gave the chef the opportunity to experiment with the finest local Balearic ingredients, many of which were not served in the main restaurant. Three years ago, DINS Santi Taura moved to Palma in Hotel El Llorenç Parc de la Mar 5*. Here he continues to delve into the culinary memory and recipes of the island, focusing on seasonal products at their peak. The awarded Michelin star and 2 Guia Repsol Soles in 2021, 2022 and 2023 are confirmations of the culmination of his work and passion.
