Irish Mash IDDSI FRIENDLY RECIPE - LEVEL 4 PUREED

Mashed potatoes are a staple food in almost every Irish household.

Delicious and creamy, mashed potatoes are the perfect addition to many meals, especially on a chilly winters night.

Ingredients (to serve 4)

• 800 grams of potatoes

• 40 grams of chopped butter

• 1/3 cup of milk

• Finely ground salt and pepper to taste

Procedure:

1. Wash and peel potatoes and cut into large chunks

2. Cook in a large saucepan of boiling salted water for 20 minutes or until tender

3. Drain potatoes well. Return pan to the stove with low heat

4. Using a potato masher, roughly mash the potatoes

5. Add butter and milk to potatoes and season as desired.

6. Beat with a wooden spoon

7. Serve warm and enjoy!!

Level 4 – Pureed

The spoon tilt test is used to determine the stickiness of the sample (adhesiveness) and the ability of the sample to hold together (cohesiveness).

When doing a spoon tilt test, the food should:

1. A full spoonful must plop off the spoon if the spoon is titled or turned sideways

2. Be cohesive enough to hold its shape on the spoon

3. A scooped mound may spread or slump very slightly on a plat
