Steel

In general, harder steels are superior because they keep a sharp edge for longer. There was a time when there was a choice between hard carbon steels that could rust with moisture and softer stainless steels. Modern technology has enabled to produce high-carbon stainless steels that are extremely hard but are still resistant to corrosion. The steel we employ is an AUS-8 Japanese high carbon steel known as AUS-8.

Feel

Even the finest steel knives that are too uncomfortable to handle will not be used. A quality knife should feel balanced in your hand. Bolsters aren't required, but we opted to include one on the Misen knife because it added the most comfort and added support while cooking.
