S'mores cookie cake: a perfect summer dessert By: Meg Enquist '23

A s'mores cookie cake is a fun and unique dessert to make during the upcoming summer months. This dessert gives you the best of both worlds: the flavor of a s'more and the texture of a cookie.

This recipe calls for one cup of flour, half a cup of unsalted butter, half a cup of brown sugar, one egg, half a teaspoon of baking powder, one teaspoon of vanilla extract, one fourth of a teaspoon salt, sixteen graham crackers, one cup of marshmallow full, one cup of milk chocolate chips and one cup of mini marshmallows.
Preheat the oven to 325 degrees fahrenheit. Then, coat a nine inch circle pan with nonstick spray.
Begin by combining the butter and brown sugar in a mixer or bowl. Continue mixing until the ingredients have been fully combined.
Next, add the vanilla extract and egg into the mixer.
Using a food processor, crush the graham crackers until only crumbs remain.
In a separate bowl, combine the graham cracker crumbs, flour, baking powder and salt.
Slowly add the dry ingredients to the wet ingredients until they have been fully combined and the dough is formed.
Cover the pan with roughly two thirds of the dough. Then, spread a thin layer of the marshmallow fluff. Sprinkle the mini marshmallows and chocolate chips on top.
Break the remaining one third of the dough into small, flat pieces and place these on top. Then, bake the s'mores cookie cake in the oven for 30 minutes.
Allow the s'mores cookie cake to cool for 20 minutes before serving. Enjoy!
